to rock or other hard substrata in coastal areas. Seaweed is chock-full of vitamins, minerals and fibre. For at least 1,500 years, the Japanese have enrobed a mixture of raw fish, sticky rice, and other ingredients in a seaweed called nori. The delectable result is a sushi roll. Certain seaweeds do, in fact, possess powerful cancer-fighting agents that researchers hope will eventually prove effective in the treatment of malignant tumours and leukaemia. While dietary soy was long credited for the low rate of cancer in Japan, this indicator of robust health is now attributed to dietary seaweed. Its leaves are bright green and composed of lobed, ruffle-edged leaves that are coarse and sheet-like, resembling a leaf of lettuce. The leaves may appear flat, thin, broad, round or oval, often perforated with holes of various sizes. Almost no stalk exists at the point of attachment and no true roots are present.</p>\n\n<p class=\"font_8\">&nbsp;</p>\n\n<p class=\"font_8\"><span style=\"font-weight:bold\">SUSTAINABILITY:&nbsp;</span> Sea lettuce is harvested by hand and is very fast growing. Green Fingers&nbsp;</span></h5>\n\n<p class=\"font_8\"><span class=\"color_20\">​</span></p>\n\n<p class=\"font_8\"><span style=\"font-weight:bold\">SPECIES:&nbsp;</span>Green Fingers (Codium fragile)</p>\n\n<p class=\"font_8\" style=\"text-align:justify\">Codium is in the group of green seaweeds and is called multiple names, including green sea fingers or stag seaweed. It originates from the Pacific Ocean near Japan and has become one of the most invasive species on the coast of the northern Atlantic Ocean. Some research indicates that a native subspecies does exist in Sydney. It is transported by ship&rsquo;s ballast and quickly attaches to structure such as wharves and pylons. Seaweeds contain little fat but is rich in vitamins, minerals, and polyunsaturated fatty acids (PUFA). (3)(2) Brown seaweed is estimated to contain approximately 10% protein, 65% carbohydrates and less than 2% lipids. Kelp also contains a high content of iron and iodine. Ecklonia kelp varies in colour from a light brown to pale yellow and even bright yellow.</p>\n\n<p class=\"font_8\">&nbsp;</p>\n\n<p class=\"font_8\"><span style=\"font-weight:bold\">SUSTAINABILITY:&nbsp;&nbsp;</span>Ecklonia kelp is the most widespread of all kelps along the coast of NSW. Whilst it is observed down as far as 10m, it predominantly lives in the first few metres from the low tide mark. Cray weed forests can be found in most sheltered costal areas, even throughout Sydney contrary to the belief of some.</p>\n\n<p class=\"font_8\" style=\"text-align:justify\">&nbsp;</p>\n\n<p class=\"font_8\"><span style=\"font-weight:bold\">SUSTAINABILITY:</span> A limited quantity of cray weed is permitted to be collected each month to ensure sustainability.</p>\n\n<p class=\"font_8\"><span style=\"font-weight:bold\">COLLECTION: </span>Only wrack or detached cray weed is collected ensuring no disturbance to the natural sea floor</p>\n\n<p class=\"font_8\"><span
